Almond Apricot Snack Cake

This is filling, moist and so deelish! Good for packing in lunches or with tea.

Almond Apricot Snack Cake

Ingredients
  • 1 c dried apricots organic and unsulphured
  • 1 c raw almond butter
  • ½ c unsweetened applesauce
  • 2 large organic eggs
  • 2 t vanilla
  • ½ - 1 t almond flavoring
  • ½ t baking soda
  • ½ t sea salt
Instructions
  1. Preheat oven to 350. Grease a pie pan or 8x8” glass baking dish with coconut oil.
  2. Place the dried apricots into a food processor fitted with the “s” blade.
  3. Process until finely chopped.
  4. Add all of the remaining ingredients and process until combined, about 20 seconds (it too about 5 seconds for me). Be careful not to over-process the mixture, otherwise, the apricots will turn into a puree. You want the mixture to be a little chunky.

  5. Pour into the baking dish. Bake for 25-20 minutes. Cool slightly before serving.
