This is such an easy salad to throw together. Perfect to go lunch option.

Smoked Salmon Salad


Ingredients
  • 1/3 – ½ lb smoked salmon
  • 1 can organic garbanzo beans
  • ½ c chopped fresh parsley
  • 2 scallions chopped
  • 2 stalks celery diced
  • 1 T olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste
Instructions
  1. Toss all ingredients into a bowl, mix and serve.
