Quinoa and Kale Salad
Course: Side Dish
Ingredients
  • 1 1/2 cup quinoa
  • 3 cups water or broth
  • 4-5 kale leaves, rinsed and chopped
  • 1 small red pepper, diced small
  • 1 bunch green onions, cut into small rounds
  • 1/2 cup fresh squeezed lemon juice
  • 1/4 cup olive oil
  • salt and pepper to taste
Instructions
  1. Cook quinoa per instructions (15-20 min). Allow to cool. 

  2. While cooling place all other ingredients into a bowl. 

  3. Add cooked quinoa and toss again and serve. Keeps for days in the refrigerator.
