- 1 1/2 cup quinoa
- 3 cups water or broth
- 4-5 kale leaves, rinsed and chopped
- 1 small red pepper, diced small
- 1 bunch green onions, cut into small rounds
- 1/2 cup fresh squeezed lemon juice
- 1/4 cup olive oil
- salt and pepper to taste
Cook quinoa per instructions (15-20 min). Allow to cool.
While cooling place all other ingredients into a bowl.
Add cooked quinoa and toss again and serve. Keeps for days in the refrigerator.
