Chicken and Chard Chili

Ingredients
  • 2-3 T olive oil
  • 1 medium onion chopped
  • 3 cloves garlic crushed
  • 1-2 jalapeno peppers seeded and finely diced
  • 2 organic chicken breasts chopped into small pieces
  • 1 T ground cumin
  • 1 T mild chili powder
  • 1 t smoked paprika
  • 2 c tomato sauce
  • 3 c water
  • 5-6 c cooked pinto or red beans
  • 2 t Herbamare or 1 t sea salt or to taste
  • 2 c chopped chard
Instructions
  1. Heat a 6 qt. pot over medium heat. Add the olive oil, then add onions, sauté for 5-10 minutes or until onions are soft.
  2. Add crushed garlic, jalapeno peppers and chicken; sauté for 2-3 minutes more.
  3. Add cumin, chili powder and smoked paprika. Saute a minute more.
  4. Add tomato sauce, water, beans and Herbamare. Stir, cover, simmer on medium-low heat for 45-60 minutes.
  5. Once the chicken is very tender and the flavors have melded, add chard and simmer for 5 minutes more. Turn off heat, taste, adjust salt and seasonings if necessary.
Recipe Notes

Tip: cover your hands with olive oil prior to handling peppers, this will protect your hands from the burn. Or wear gloves if you have them.
